Create a hearty family dinner with this easy crock pot chili recipe. Made with lean ground beef, tomatoes, and pinto beans, it’s quick to throw together and cooks in your slow cooker all day, so dinner will be ready when you are. Serve the chili in warm bowls with a side of warm cornbread and butter for a complete meal.

By using a purchased chili seasoning mix and canned diced tomatoes, tomato sauce, and pinto beans, this delicious ground beef dinner couldn’t be more simpler to create. It requires eight to 10 hours of cooking in a slow cooker set on low and is a perfect set-it-and-forget-it dish.

If you like, you can use a homemade chili seasoning mix. It requires a few common spices, including chili powder, minced onion, garlic powder, oregano, and salt and pepper. This allows you to control the ingredients, adjust the flavor, and keep some on hand for the next batch of chili. For an equivalent measurement to the average envelope of store-bought seasoning, use about 1/3 cup of your homemade mix.

One critical step to this recipe is browning the ground beef. By precooking the beef before adding it to the slow cooker, you’ll sear in the flavor, improve the meat’s texture, and be able to drain off any grease. The low temperature of a crock pot simply cannot replicate these results, even over the hours-long cooking time. As a bonus, the sautéed onions that are cooked along with the beef will add flavor to your chili and make it even better than if you were to use raw onions.

  • 1 pound lean ground beef (85 to 90 percent lean)

  • 1 medium onion, chopped

  • 2 (15-ounce) cans tomato sauce

  • 1 (14.5-ounce) can diced tomatoes with onion and garlic

  • 2 (15-ounce) cans pinto beans, rinsed and drained

  • 1 (1.25-ounce) envelope chili seasoning mix, (e.g., McCormick)

  • 1/2 teaspoon garlic powder, or to taste

  • 2 teaspoons chili powder, or to taste

  • Salt, to taste

  • Freshly ground black pepper, to taste

Note: For thicker chili, add a few tablespoons of cornmeal about 30 minutes before it’s ready.

Kitchen Notes

Top your chili off with freshly baked cornbread croutons. Toss about 2 cups of cubed cornbread with 1/4 cup of melted butter and a tablespoon of fresh chopped parsley, if desired. Spread the cubes out on a large baking sheet. Bake in a preheated 450 F oven for about 8 to 10 minutes, or until they are browned.

Award Winning Chili Recipe Ingredients
5 slices thick sliced, hardwood hickory smoked bacon
1 red bell pepper, chopped
1 green bell pepper, chopped
3 stalks celery, chopped
1 small yellow onion, diced
½ – 1 jalapeno pepper, seeded and diced
1 10.5 oz can beef consomme (you can also use beef stock)
1 6 oz can tomato paste
1 tablespoon Worcestershire sauce
2 15 oz. cans diced tomatoes, undrained
1 15 oz. can pinto beans in mild or medium sauce (also called Chili Beans)
1 15 oz. can kidney beans in mild chili sauce
2 pounds ground beef

Crockpot Chili Ingredients – Spices
4 tablespoons chili powder
1 tablespoon dried oregano
1 tablespoon white sugar
2 teaspoons cumin
1 teaspoon smoked paprika
3 teaspoons garlic powder
1 teaspoon basil
1 teaspoon Lawry’s seasoned salt
½ teaspoon ground pepper
½ teaspoon cayenne pepper

Award Winning Chili Recipe Directions
Prepare the vegetables for the recipe first. Roughly chop the red and green peppers and celery. Seed the jalapeno pepper(s), removing the seeds and membrane, then finely dice. Use more jalapeno for a spicier chili. Peel and dice one small yellow onion.

Cook the bacon in a large cast iron skillet, until the bacon is lightly crisp but not overdone. Remove the bacon and drain on a paper towel lined plate.

Saute the vegetables in the bacon grease for about 5 minutes, until tender. Remove the vegetables from the skillet, draining as much bacon grease from the vegetables as you can. Cook the ground beef in the skillet with the bacon grease. Cook the beef one pound at a time so the meat has enough room to brown and not steam. Break the ground beef into pieces about 1 – 2 inches. When cooked through, remove from the skillet and repeat with remaining meat.

Measure all of the spices into a small bowl, and mix together.

Now it’s time to assemble all of the ingredients into the slow cooker. Mix the beef consomme or beef stock in the crockpot with the tomato paste. Add the Worcestershire sauce and spice mixture, and stir to blend. Taste the mixture and adjust spices as you like. Add the cans of tomatoes and beans, all undrained. Add the beef and sauteed vegetables. Chop or cut the bacon into about ½ inch pieces and add to the crockpot chili mixture. Cover and cook on low for about six hours. I love that this is a crockpot chili recipe! It’s so easy to put together in the morning and have delicious chili ready for dinner!
