This delicious baked pork tenderloin is wrapped in bacon and flavored with seasoned salt and herbs. Pork tenderloins can vary greatly in size. To avoid undercooking or overcooking, use a reliable instant-read food thermometer.
The bacon adds extra fat, flavor, and juiciness to the mild, lean pork tenderloin. To lessen the amount of fat, partially cook the bacon, about half way, before wrapping the pork. The bacon should still be flexible enough to wrap around the meat. You may use pre-cooked packaged bacon, if you’d like.
- 1 pork tenderloin (about 1 to 1 1/4 pounds, or two small pork tenderloins)
- 1 tablespoon garlic powder
- 1 teaspoon seasoned salt (or a Cajun seasoning blend with salt)
- 1 teaspoon basil
- 1/2 teaspoon oregano
- 1 teaspoon black pepper
- 3 to 4 strips bacon (partially cooked)

Bacon Wrapped Pork Tenderloin Ingredients
2 lbs pork tenderloin (2 tenderloins)
12 – 14 pieces bacon

2 tablespoons avocado or olive oil

Preheat the oven to 375 degrees. Combine the ingredients for the spice rub – measure out 1 tablespoon brown sugar, 1/2 teaspoon cumin, 1/2 teaspoon cinnamon, 1/4 teaspoon smoked paprika and 1 teaspoon kosher salt. Mix all together.

How To Cook Bacon Wrapped Pork Tenderloin
Wrapping the pork with bacon will add rich, smoky flavor and the fat will help seal moisture into the tenderloin. Stack the tenderloins together, and begin wrapping the bacon around the pork, starting at one end and moving your way down the tenderloin. I start on top, stretching the bacon and pulling it under, then overlapping the end with the right side and wrapping it, continuing around the pork. I find that this helps keep the bacon wrapped tightly, without needing to secure it with toothpicks, however if you’re having trouble keeping the bacon wrapped (sometimes happens with thicker slices of bacon), feel free to use butcher’s twine or toothpicks.
How To Make Pork Tenderloin In Oven
Add 1 – 2 tablespoons of avocado or olive oil to a large cast iron skillet, and begin heating over medium heat. Place the tenderloin into the skillet, you may need to curve it slightly to fit depending on the size of your meat. We’re going to cook this over medium heat for about 5 minutes, just to start rendering the bacon on the bottom a bit so it will be cooked through. Then place this into the 375 degree oven and roast.
Making the Maple Syrup Brown Sugar Glaze
While it’s cooking, make the glaze. In a medium saucepan, combine ½ cup brown sugar, 1 tablespoon flour, ¼ teaspoon dry mustard. Combine 1/2 cup of water, 1 tablespoon apple cider vinegar and 2 tablespoons of maple syrup. Mix the dry ingredients and add the liquid ingredients, stirring to combine. Heat over medium low heat, at a low simmer until the sugar has dissolved.
Finishing the Bacon Wrapped Pork Tenderloin
After the pork has cooked for 45 minutes, pour about half of the glaze over the top of the roast. Continue to cook for about 15 minutes, until the internal temperature has reached 150 degrees.
Let the pork roast rest for about 10 minutes, then slice into 1 inch thick servings and serve with the reserved glaze.
