This delicious baked pork tenderloin is wrapped in bacon and flavored with seasoned salt and herbs. Pork tenderloins can vary greatly in size. To avoid undercooking or overcooking, use a reliable instant-read food thermometer.

The bacon adds extra fat, flavor, and juiciness to the mild, lean pork tenderloin. To lessen the amount of fat, partially cook the bacon, about half way, before wrapping the pork. The bacon should still be flexible enough to wrap around the meat. You may use pre-cooked packaged bacon, if you’d like.

Ingredients

  • 1 pork tenderloin (about 1 to 1 1/4 pounds, or two small pork tenderloins)
  • 1 tablespoon garlic powder
  • 1 teaspoon seasoned salt (or a Cajun seasoning blend with salt)
  • 1 teaspoon basil
  • 1/2 teaspoon oregano
  • 1 teaspoon black pepper
  • 3 to 4 strips bacon (partially cooked)

Steps to Make It

  1. Gather the ingredients.

  2. Preheat the oven to 375 F/190 C/Gas 5.

  3. Combine garlic powder, seasoned salt, basil, oregano, and black pepper in a small bowl. Coat the pork with olive oil, and then rub with the seasoning mixture.

  4. Wrap the pork with bacon and secure with toothpicks. You can partially cook the bacon in a skillet to render some of the fat. It should still be flexible for wrapping around the pork.

  5. Place the pork in a baking pan; bake uncovered the preheated oven for 30 to 45 minutes, or until the pork reaches at least 145 F / 62.8 C, the minimum safe temperature for pork (USDA).

  6. Remove the pork from the oven. Tent the pork loosely with foil, and let it stand for about 10 minutes before slicing.

  7. Serve and enjoy!

Tip

  • How to Remove the Silver Skin: The silver skin is the thin silver membrane that covers the pork tenderloin. It will shrink as the pork cooks, which can interfere with the shape of the tenderloin. Slip the tip of a small, sharp knife under the silver skin near the end to loosen it. With a towel or paper towel in hand, hold the loosened piece of silver skin (the towel helps keep it from slipping out of your hand). Slide the knife down the length of the silver skin, angling the blade upwards so you will not cut into the meat.

Recipe Variations

  • Brush the bacon with a few tablespoons of maple syrup or sprinkle it with some brown sugar before you wrap the pork tenderloin.
  • Use a quick seasoned salt blend: Combine 3 tablespoons of table salt with 1/4 teaspoon each of dried leaf thyme, garlic powder, marjoram, and celery salt. Add 1 teaspoon of paprika, 1/2 teaspoon of dry mustard, 1/4 teaspoon of onion powder, and a dash of curry powder. Makes about 1/4 cup of seasoned salt.

Bacon Wrapped Pork Tenderloin In The Oven | How To Cook Pork Tenderloin | Cooking Up Love

We’re making Bacon Wrapped Pork Tenderloin In The Oven, and it’s one of the easiest fancy meals you can make! We hit the pork tenderloin with a savory sweet rub, wrap it in smoky bacon, bake it in a hot oven, and baste with a maple syrup glaze. It’s ready in about an hour, then just slice and serve. It tastes just as amazing as it looks, with moist, tender pork tenderloin and smoky bacon in every bite. Easy enough for family dinners and perfect for holidays and celebrations.

Bacon Wrapped Pork Tenderloin Ingredients
2 lbs pork tenderloin (2 tenderloins)
12 – 14 pieces bacon
Sweet and Savory Rub
Maple Syrup and Brown Sugar Baste
2 tablespoons avocado or olive oil

Sweet and Savory Rub Ingredients
1 tablespoon brown sugar
½ teaspoon cumin
½ teaspoon chili powder
½ teaspoon cinnamon
¼ teaspoon smoked paprika
1 teaspoon kosher salt

Maple Syrup and Brown Sugar Baste Ingredients
1/2 cup brown sugar
1 tablespoon flour
1/4 teaspoon dry mustard (ground mustard or mustard powder)
1/2 cup water
1 tablespoon apple cider vinegar
2 tablespoons maple syrup

Bacon Wrapped Pork Tenderloin In The Oven Instructions
Preheat the oven to 375 degrees. Combine the ingredients for the spice rub – measure out 1 tablespoon brown sugar, 1/2 teaspoon cumin, 1/2 teaspoon cinnamon, 1/4 teaspoon smoked paprika and 1 teaspoon kosher salt. Mix all together.

I’m using 2 pounds of pork tenderloin from Costco. They come in a 4 pound package for about . Each package has 2 tenderloins inside, weighing about 2 pounds. You can make this dish for about – 8 , and it will serve 6 – 8 people.

Pat the tenderloins dry with paper towels, and sprinkle all sides with the seasoning rub.

How To Cook Bacon Wrapped Pork Tenderloin
Wrapping the pork with bacon will add rich, smoky flavor and the fat will help seal moisture into the tenderloin. Stack the tenderloins together, and begin wrapping the bacon around the pork, starting at one end and moving your way down the tenderloin. I start on top, stretching the bacon and pulling it under, then overlapping the end with the right side and wrapping it, continuing around the pork. I find that this helps keep the bacon wrapped tightly, without needing to secure it with toothpicks, however if you’re having trouble keeping the bacon wrapped (sometimes happens with thicker slices of bacon), feel free to use butcher’s twine or toothpicks.

How To Make Pork Tenderloin In Oven
Add 1 – 2 tablespoons of avocado or olive oil to a large cast iron skillet, and begin heating over medium heat. Place the tenderloin into the skillet, you may need to curve it slightly to fit depending on the size of your meat. We’re going to cook this over medium heat for about 5 minutes, just to start rendering the bacon on the bottom a bit so it will be cooked through. Then place this into the 375 degree oven and roast.

Making the Maple Syrup Brown Sugar Glaze
While it’s cooking, make the glaze. In a medium saucepan, combine ½ cup brown sugar, 1 tablespoon flour, ¼ teaspoon dry mustard. Combine 1/2 cup of water, 1 tablespoon apple cider vinegar and 2 tablespoons of maple syrup. Mix the dry ingredients and add the liquid ingredients, stirring to combine. Heat over medium low heat, at a low simmer until the sugar has dissolved.

Finishing the Bacon Wrapped Pork Tenderloin
After the pork has cooked for 45 minutes, pour about half of the glaze over the top of the roast. Continue to cook for about 15 minutes, until the internal temperature has reached 150 degrees.

Let the pork roast rest for about 10 minutes, then slice into 1 inch thick servings and serve with the reserved glaze.

This bacon wrapped pork tenderloin recipe makes a tender roast with incredible, complex flavor from the spiced rub, the smoked bacon and sweet, sticky glaze.
