  • 1 cup orange juice

  • 1/2 cup soy sauce

  • 1 teaspoon freshly ground black pepper

  • 1/4 teaspoon kosher salt

  • 6 medium shark steaks

  • Peanut or canola oil, for frying

Steps to Make It

  1. Gather the ingredients.

  2. In a small bowl, whisk together orange juice, soy sauce, ketchup, chopped parsley or cilantro, lemon juice, minced garlic, black pepper, salt, and red pepper flakes.

  3. Place fish in a shallow baking dish and pour marinade over top. Using tongs, turn shark steaks to coat well. Cover with plastic wrap and marinate in refrigerator for 1 to 2 hours.

  4. Heat a grill to medium-high heat. Right before placing fish on grill, oil grill grates using a pair of outdoor cooking tongs and folded paper towels soaked with oil. Make about 3 to 4 passes across the grates to ensure a nonstick cooking surface. This is important when grilling fish since it tends to fall apart if conditions are not quite right.

  5. Remove fish from marinade, reserving marinade. Place fish on preheated grill and cook for 5 to 6 minutes per side, or until fish reaches an internal temperature of 145 F and flakes easily when tested with a fork.

  6. Meanwhile, pour marinade into a saucepan and bring to a high simmer for 2 minutes, stirring often. Reduce heat to medium-low and let simmer for 10 to 12 minutes. Remove from heat and cover to keep sauce warm.

  7. Once fish is cooked, remove shark steaks from grill and serve with sauce and your choice of sides.
