3 to 4 pounds chicken pieces, or 1 broiler-fryer, cut up
1/2 cup Russian dressing
1 (1-ounce) envelope onion soup mix
2/3 cup apricot preserves
Water, as needed
Gather the ingredients.
Place chicken pieces in a shallow baking dish, skin-side up. Position a rack in the center of the oven and heat to 350 F.
In a medium bowl, whisk together the dressing, soup mix, and preserves. If the sauce is too thick and not pourable, whisk in water 1 to 2 teaspoons at a time to reach desired consistency.
Pour the mixture over the chicken.
Bake 1 1/4 to 1 1/2 hours, or until chicken is tender and the internal temperature reaches 165 F on an instant-read thermometer.
- Adjust the chicken cooking time according to the pieces you’re cooking. The USDA states that 165 F is the minimum safe internal temperature for all chicken. Dark meat, including thighs, however, will taste better and still be juicy when cooked to 175 F or slightly higher.
- Season the chicken before adding the sauce if you like. A dash or two of black pepper and a bit of salt and ground ginger or dried rosemary would be a good fit for this sauce. You can also try a few dashes of soy sauce for a little contrast.
How to Store
- Store leftover chicken in an airtight container, refrigerated, for up to 3 days. Be sure to refrigerate leftover chicken within an hour. Reheat in a 350 F oven until warmed through.
