Ingredients

  • 1 (8-ounce) package smoked salmon

  • 12 large eggs

  • 1/3 cup heavy cream

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • 3 tablespoons unsalted butter

Steps to Make It

  1. Cut the smoked salmon into small pieces and set aside. Use a sharp knife or kitchen shears.

  2. In a large bowl, beat the eggs with cream, salt, and pepper until combined.​

  3. In a large skillet, melt butter over medium heat.

  4. Add the egg mixture to the skillet. Cook, stirring occasionally with a heatproof spatula until the eggs are almost cooked but still shiny and moist. Scrape the bottom of the skillet with the spatula and turn the eggs over as they cook. This should take about 6 to 7 minutes for 12 eggs.

  5. Stir the salmon into the eggs; cook for another minute or two until the eggs are cooked to 160 F. Serve immediately.
